5 Vegetarian Seasonal Summer Recipes

When you think of summer, you think of warm weather, beaches, bike rides, and fresh fruits and veggies. Tomatoes, cherries, zucchini, blueberries, and corn are just a few of the fresh vegetables that grow abundantly in the summer. Thanks to a few of our Registered Dietitian friends, we now have five delicious recipes to share that highlight some of our favorite summer produce. What we love most about these recipes is that they are vegetarian, and make the produce the center of the meal. These plant-based meals are high in fiber, vitamins, and minerals, and are extremely cost-effective because they don’t require meat. 1. Cannellini Bean Salad from Food, Pleasure, and Health

What we love most about this recipe is that it features the cannellini bean, a white bean that typically gets bypassed in the canned-foods aisle of the grocery store. These beans are buttery and smooth, high in protein and fiber, and extremely inexpensive!

2. Cherry Caprese Pasta Salad from Byte Sized Nutrition

This salad puts a sweet spin on the ever popular caprese salad by subbing tomatoes for sweet cherries. The cherries, along with mozzarella, arugula, and basil swim in a sea of pasta with a topping of balsamic vinegar to make this a hearty but refreshing summer meal.

This delicious blueberry recipe can be enjoyed for breakfast, dessert, or even a mid-day snack. We love that this treat can be made with either fresh or frozen blueberries, so if you really love it, you can enjoy it every season!

It’s no secret that kids love french fries, and kids love ranch dressing! Jeanne swaps out your typical fried potatoes, for baked, seasonal zucchini. By using Greek yogurt as the base for the dip, you add a little extra protein to this dish, making it a perfectly balanced snack or side dish.

5. Tomato Corn Avocado Salad from Your Choice Nutrition

This salad is so versatile it can be served up a main course, a side dish, or even as a fancy salsa or dip to enjoy with a side of tortilla chips. The black beans add a hearty serving of fiber and protein, while the avocado is packed with healthy fat, making for a deliciously nutritious and satisfying meal!
