Water is the essential medium for all of your metabolic processes, and without it, your organs and cells fail to run efficiently. While having fun in the summer sun is great for your mental health, the extra heat causes you to lose water more rapidly through sweat, sometimes faster than you might be able to replace it! That’s why we recommend hydrating at every opportunity, not only by drinking water, but by eating hydrating foods.
This hydrating Spicy Watermelon Salad will not only quench your thirst, it will satisfy every taste bud as every bite is filled with sweet watermelon, spicy arugula and jalapeno, sour lime, and savory feta cheese. It only takes a few minutes to make and can be served up as an elegant side dish, or take center stage as a light main course.
Spicy Watermelon Salad
- 1/4 watermelon, cubed
- 4 cups arugula
- 3 "snacking" or Persian cucumbers, sliced (these can usually be found with the bagged salad greens)
- 1/2 cup feta cheese
- 1/4 cup mint, chopped
- 1/4 cup hemp seeds
Place all ingredients in a large bowl and toss.
Spicy Avocado Dressing
- 1 avocado
- 1/4 cup lime juice
- 1/4 seeded jalapeno (use more if you prefer spice)
Blend until smooth. Add to salad and toss generously. Store any extra in a jar or squeeze bottle.
